Presidents Day


Today the boy and I had a nice relaxing day at Balboa Park.  As usual finding parking was lame, but once we did we had a great time.  Our first stop was the Japanese Friendship garden.  We watched a juggling show
 performed by David Kamatoy, A.J. really enjoyed the show.  At first we weren't going to watch, but then we decided to wait for the show.  I am glad we did and so was my son.

Thinking back it's weird how we at first go with what's comfortable, (ie. sticking to the plan) but then doing the uncomfortable and having more fun. I really did not plan on going to the park, however I don't think we would've had a better time doing something else.

New Toy

Over the weekend I finally replaced my Ibook with a Macbook.  I absolutely love it.  Of all my purchases over the past few years this is the best.  It will do all that I want and probably more. I hope this one will last me another four years.

Bulgur-Filled Aubergines


This is was a little hard to make, but well worth it. I had to substitute the Bulgur-wheat with vegetarian ground burger. It came out a little bland, we sprinkled some Parmesan cheese over the top. That really helped to bring out the flavor.

New Hobby

For the new year I decided on a fairly drastic lifestyle change. As of January 1, 2008 I became a vegetarian. As of 1/6/08 I also quit smoking. This weekend I I will be incorporating an exercise regimen as well. In order to be a proper vegetarian I bought some cook books. The day I quit smoking I made this dish:
It's called Quinoa (keen-wah) with Pistachios Pilaf. I found it mighty tasty but it did need some soy sauce. With this change in my diet I have to cook which make me very conscious of what I eat. This week I am making an eggplant dish. Very exciting!!

How did 2008 sneak up on me??

Well 23 days in and I still can't believe it's 2008. Not that I'm complaining, I was ready for 2007 to be over. It wasn't the worst year but, not the best for me. Not that I want to recap on the year.

I have finally found that balance in my life that has made me happy to be me. My spirit has finally let go of old baggage, not that I'm ready for anyone new.

My mission for this year:
Catch up with old friends, make new ones, visit family. I also really need to get up to date with my blogging I fell off for a long while. Be happy.

Pepsi Challenge

In my family when two of us disagree on a particular subject, we bet what has been dubbed the "pepsi Challenge." The term Pepsi Challenge was not derived from the commercials you see on T.V. it actually comes from the movie Pulp Fiction. A good example is two months ago I was watching Superman Returns with my brother Brendan and my Mom. The debate was is Metropolis based off a city in New Jersey and Gotham city is based off New York City. My mom said they where both based off NYC my brother said Gotham is NYC and Metropolis was NJC. Being in the middle and having no clue I declared at that point a Challenge. The wager $5.00. After bother parties agreed, I searched the Internet and based off research determined that both Gotham and Metropolis were both based off of NYC in the popular comic books.
